Now, this is just Ser Jacopo showing off what they can do. Taking sinuous style to extremes, there's pretty much three ways to do a shape like this properly. A) You can make it out of a gourd specially grown to achieve the shape. B) You can make the shank out of multiple sections, each very
carefully drilled in order to get any kind of proper air-flow. C) You can have a special set-up that will drill along a smooth, continuous curve, just for making shapes like this.
Ser Jacopo goes for the third option, and given the highly gestural nature of so many of their designs, they get a lot of mileage out of being able to bore out a curved draft-hole. In fact, I'd say they got a lot of mileage out of it on this pipe alone
