Rojas - Street Tacos Barbacoa Toro
Bravo!
The effect of the Sumatra wrapper was subtle at most, and I didn't taste a lot of pepper or wood so much. However, I did get a wonderful tangy, brothy, earthiness that I usually associate with criollo leaf (perhaps the Nicaraguan leaf from Somoto). Construction/burn-rate/ smoke output were excellent. Looking forward to trying more from Rojas. Bravo Maestro Noel Rojas!
