Jon and Andrea Allen met working as baristas in Fayetteville, Arkansas, and founded Onyx Coffee Lab in 2012 with the stated goal of both serving and challenging the specialty coffee industry — a claim backed by first-place finishes at the 2017 US Brewers Cup and US Roaster Championship, the 2020 US Barista Championship and US Brewers Cup, and second place at the 2021 World Barista Championship. What sets Onyx apart on the shelf is transparency: Every coffee discloses its own trade data, including what Onyx paid per pound for the green, what the commodity market was paying, who they bought it from, and what the lot scored on the cupping table, and roast levels are presented as an Agtron reading rather than an adjective. The range runs from Southern Weather, the foundational house blend of milk chocolate and plum, to the expressively dark Monarch, and outward into a constantly rotating catalog of single origins and geishas, so check back often.
